I heard about Fresh Air & Pancake (https://www.zomato.com/melbourne/fresh-air-pancake-cbd)  from my mum and was determined to check it out. After all, how could a souffle-style pancake topped with cream in a pretty package be anything but amazing! I mean really this kind of magic is why I love everything from Japan. When I got to the store it was clear a lot of people felt exactly the same way – the queue on the Elizabeth St sidewalk was 3 deep! The long wait added to the anticipation – particularly given the lateness of the hour (the store closes at 1:45am – well past my usual bedtime…), but nothing could have prepared me for the visual spectacle of the finished product.  A tall, single pancake topped with marshmallows and with a side of fresh cream, in a special carry case so it didn’t deflate.  I think it got better with every bite – sensational!

Highlights: the pancake was the hero here!

Lowlights: It wasn’t cheap at $17.50 – but definitely worth it for the production values and packaging alone.
